Professional chef and pastry expert known as the creator of L'eclair de Génie and du Dépôt Légal.
With an interest in pastries at the age of 16, he began working at Legrand in Quimper. There, he expanded to a variety of restaurants homing in on his expertise in pastries. He spent 15 years working as the Director of Creation at Fauchon before starting his own business.
He has published several books on the art of pastries. He also posts most of his work to his Instagram account, where he has over 250,000 followers.
He was born and raised in Cornouaille.
He can be seen photographed with a variety of famous chefs, including Pierre Herme and Pierre Sang Boyer.
