He first began his career in baking at the age of 14. At 23, he began traveling to France, Italy, and Portugal to learn different techniques of baking. He began working as a technical advisor to an Italian baking brand in 1999. In 2008, he founded Turris, his own oven baking bread company.
He is known for having published several books on his baking techniques and recipes including Pan in 2009, Homemade Recipes with Yesterday's Bread in 2011, and Bakery in 2013.
He was born and raised in Spain to a family of fellow bakers.
